Midwest Cookbook Club Meets Again
July 25, 2013

On Thursday, July 25th the Midwest Cookbook Club met at Carol's
house in Libertyville. On our way to the door we were greeted by the
warm and colorful plants and green tones of summer.
Working with her delightful co-hostess, Gale, they put on a
beautiful summer in-door and out-door dinner
that was the envy of the neighborhood.

In orange, sunflower yellow and golden tones, the table popped
with flowers and contemporary designs and accessories.

Susie finishes last minute preparations on her
Avocado Soup with Citrus-Shrimp Relish.

Other fresh and light appetizers included Traditional Hummus (Lois)
and Chunky Tomato-Fruit Gazpacho (Mary).

The garden patio was lush, green and ready for a garden party.

Mary toasts the group with a rich Blackberry Limeade made by Lynda.

The first time we actually had fresh cooked meat at our club...
way to spoil us Carol.

On to the main course.

Honey and Herb-Roasted Root Vegetables made by Lynda accompanied
the Seoul-ful Chicken with Minted Cucumbers that Carol grilled.

This delicious main course was topped off with Arugula, Grape and
Sunflower Seed Salad made by Diane, Black Lentil and
Couscous Salad whipped up by Gale and
Herbed Basmati Rice by Susie.

After some good group discussion about the
Cooking Light Way to Cook book
we moved on to the favorite course... Dessert!

Cool and fresh light-as-a-feather Lemon-Lime Layer Cake
crafted by Susie and a rich tasty Bourbon-Pecan Tart
with Chocolate Drizzle was made by Lynn.

Finishing off dessert we had a perfectly cooked Fruit Crisp made by
Lynn and a Pine Nut Biscotti by Mary, making the evening
a sweet success.  As always, fun was had by all conquering the
Cooking Light Way to Cook cookbook.

Best wishes to our friend Carmen... we missed you at our Summer club.
We hope to see you at our next exciting installment
of the Midwest Cookbook Club.

Until Next Time -

when we cook from The Food Matters Cookbook by Mark Bittman.
See you there!
